Homemade McRibs
A multi-source homemade McRib-style sandwich with McRub, McSauce, and mock-rib ground-pork patties.

What you need
McRub
- 1/4 cup kosher salt
- 1/3 cup brown sugar
- 1 tablespoon chili powder
- 2 tablespoons freshly ground black pepper
- 1 tablespoon ground cumin
- 1/2 teaspoon cayenne pepper
McSauce
- 1 cup ketchup
- 1/4 cup water
- 1/4 cup brown sugar
- 3 tablespoons white vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
McPorkPatty
- 1 lb ground pork
- 1 tablespoon breadcrumbs
- 2 tablespoons water
- A dash each of salt, pepper, and garlic
- A dash of onion powder
For Assembly
- Hoagie buns
- Dill pickles
- White onion, sliced
THE PLAN.
- Combine the McRub ingredients.
- Mix the McPorkPatty ingredients in a bowl.
- Form mock ribs on parchment paper. Use the flat end of a knife to make the top gutter.
- Cover the patties with McRub.
- Set the patties on a wire rack over a sheet pan so the grease can drain. Bake at 400°F for about 20 minutes, or until the pork reaches at least 160°F internally.
- Cover the patties with McSauce and put them under a low broil or grill for 2 minutes.
- Cover the patties with sauce again.
- Assemble each sandwich: hoagie bun, patty, dill pickles, and sliced white onion.
- Use the remaining sauce as a dipping sauce.
